We spent our Memorial Weekend in Oklahoma at the beautiful Beaver’s Bend State Park.  The Chickenman loves camping and I’m game if I can fish.  At Beaver’s Bend, which is on Broken Bow Lake and the Little Mountain Fork River you can fish for trout.  Trout are fun to catch and very yummy to eat.  This is a stringer I caught on our last day:

The trout are easy to clean-just gut them.  No need to remove the heads or scale the fish.

When camping we cook the fish on the campfire but we had a previous stringer full the night before so I cleaned these and brought them back in the cooler to enjoy at home on the grill.

A Park Ranger told us about this very simple and tasty way to cook the trout when we first started camping there many years ago.

Ingredients:

Trout

Butter

Lemon

Salt & Pepper

Yep!  That’s it!

You’ll need some heavy-duty foil and a grill.  Either charcoal or gas will work fine.

Lay the trout out on a piece of foil like this:

Then place a pat of butter and a wedge of lime in the body cavity of each trout and sprinkle with salt and pepper.

Then place another sheet of foil over the fish and form into a pouch sealing the edges.

Place on the grill over medium heat and grill with the lid closed for 10 minutes then flip the pouch over and grill 10 minutes more.

Remove from grill and be very careful when opening pouch because it will be hot and steamy!

See how the skin just pulls away from the trout when it is cooked…makes for easy eating!  You can just slip your fork under the remaining skin and lift it back to enjoy the fabulous tasty  meat inside.  The meat even pulls away from the bones so you don’t have to be too careful when eating the trout.

We served ours this night with steamed broccoli and rice.

Woodrow, our weinerdog loves camping.  The river is his favorite and we can hardly keep him out of the water.  He came home exhausted from all his water activities which included retrieving, swimming, scouting for fish and barking at canoes and kayaks as they went by.
